Thai Tea Chiffon Cake + Pandan Cream Cheese Whip
the lightest, airiest cake, inspired by my favorite boba tea
Thai tea - a black tea, typically sweetened with sweetened condensed milk and flavored with warm spices, such as cinnamon, cardamom, star anise, etc. Not dissimilar to chai tea, but characterized by its beautiful orange coloring, possibly thanks to its spices including turmeric, safflower, crushed tamarind seeds, and annatto extract, but more likely food coloring these days.
Both the thai tea and pandan add a subtle fruity, vanilla-y, refreshing flavor.
